This easy Italian casserole can be made with either ground beef or ground turkey. A perfect way to use up your summer zucchini.

Ingredients
  • 1 lb ground beef (90%) or turkey
  • 1 large Vidalia onion - chopped
  • 2 cloves garlic - minced
  • 1 28 ounce can crushed tomatoes
  • 1 teaspoon oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 zucchinis - thinly sliced
  • 1 bag egg noodles - cooked according to directions
  • 2 cups shredded cheddar cheese
Directions
  • Step 1 In a large skillet brown the meat on medium heat. If using ground turkey drizzle a few tablespoons of olive oil in pan first.
  • Step 2 Add onion and garlic. Cook for 5 minutes.
  • Step 3 Drain any grease.
  • Step 4 Stir in tomatoes, oregano, salt and pepper. Cook for 10 minutes.
  • Step 5 Stir in cook noodles. Stir in 1 cup of cheddar cheese.
  • Step 6 Remove from heat.
  • Step 7 Spray a 13×9 baking dish with cooking spray.
  • Step 8 Pour mixture into pan.
  • Step 9 Top with 1 cup of cheddar cheese.
  • Step 10 Bake in a preheated 350 degree oven for 30 minutes.
  • Step 11 Serve hot.
  • Step 12 Add succhini and cook for another 10 minutes.
