Broccoli Bacon Salad

Tired of the same old tossed salad with your summer dinner? Try my version of a broccoli salad. Lots of great flavor in a simple and quick recipe.
Ingredients
- 5 to 6 cups of broccoli florets – about 1lb
- 2/3 cup of dried cranberries
- 3/4 cup crumbled bacon – 8 slices – I use low sodium
- ½ cup sunflower seeds
- 1/3 cup red onion diced into small pieces
- 1 cup shredded cheddar cheese
- Dressing
- 1 cup mayonnaise
- ¼ cup sour cream – I use low fat
- 2 teaspoons of apple cider vinegar
- 3 tablespoons of sugar
- Salt and pepper to taste
Directions
- Step 1 Wash broccoli crowns.
- Step 2 Cut tops off into bite-size florets.
- Step 3 Blanch broccoli – place florets into a pot of boiling water for 1 to 3 minutes. Place immediately into icy cold water. Remove and drain completely.
- Step 4 Place broccoli into a mixing bowl.
- Step 5 Add cheese, bacon, red onion, cranberries, and sunflower seeds.
- Step 6 Toss ingredients together.
- Step 7 In a separate bowl mix apple cider vinegar, mayonnaise, sour cream, sugar and salt and pepper together.
- Step 8 Pour over salad.
- Step 9 Mix ingredients together thoroughly.
- Step 10 Refrigerate.
- Step 11 Serve cold with your next summer dinner. Enjoy!
