Chili for a Crowd

This classic chili will feed a crowd or you can enjoy it for a meal and freeze the rest. Flavorful and hearty I serve it over rice with tortilla chips. Shredded cheese, sour cream, avocado, jalapenos, and hot sauce are the perfect fixings to top your bowl. Enjoy!
Ingredients
- 8 to 9 lbs ground beef - I use a mix of 85% and 90%
- 6 bell peppers (yellow, orange, red) diced
- 3 large Vidalia onions diced
- 2 15 oz cans black beans rinsed and drained
- 3 28 oz cans tomato sauce
- 2 tablespoons minced garlic
- 3 to 4 teaspoons cumin powder
- 3 to 4 teaspoons chili powder
- 3 to 4 teaspoons onion powder
- 1 teaspoon kosher salt
Directions
- Step 1 Brown the ground beef until pink is gone. Drain excess grease.
- Step 2 Add cumin powder, chili powder, onion powder, and salt.
- Step 3 Mix well.
- Step 4 Add diced peppers, onions, garlic. Cook until peppers soften and onions become translucent.
- Step 5 Add tomato sauce and mix all ingredients together well. Cook on medium for 30 minutes stirring often.
- Step 6 Reduce the heat to low add beans and cook for an hour mixing occasionally.
- Step 7 Taste to see if chili needs any more spices or salt.
- Step 8 Serve over rice.
- Step 9 Tortilla chips, shredded cheese, sour cream, avocado, sliced jalapenos, and hot sauce are perfect fixings to go along with the chili. Enjoy!
