Chocolate Kahlua Pie

This no bake dessert is rich, chocolatey, and not overly sweet and it can be made a day or two in advance. There’s several steps but they are all pretty simple.
Ingredients
- 1 package chocolate sandwich cookies
- 6 tablespoons butter - melted
- 8 ounces bittersweet chocolate 60%
- 1 teaspoon instant espresso - mixed with 1 teaspoon water
- 1 package of gelatin -mixed with 1 tablespoon water
- 1 pint whipping cream
- 4 teaspoons granulated sugar
- 6 tablespoons Kahlua
- For Kahlua Whipped Cream
- 1 cup whipping cream
- 4 teaspoons granulated sugar
- 1 teaspoon Kahlua
Directions
- Step 1 Pulse package of chocolate sandwich cookies. Reserve 1/2 cup.
- Step 2 Pour melted butter over crushed cookies. Mix.
- Step 3 Pour cookie mixture into pie dish and pat down. I use a 1/4 measuring cup to pack crumbs.
- Step 4 After mixing gelatin and water together, let sit for 5 minutes.
- Step 5 Melt bittersweet chocolate in a double boiler. Set aside.
- Step 6 Whip whipping cream into soft peaks.
- Step 7 Microwave gelatin for 15 to 20 seconds. Pour into whipped cream.
- Step 8 Add sugar.
- Step 9 Add espresso mixture.
- Step 10 Add 6 tablespoons Kahlua.
- Step 11 Whip all together until stiff peaks.
- Step 12 Mix a whipped cream and melted chocolate together.
- Step 13 Add reserved 1/2 cup of crushed cookies and mix.
- Step 14 Pour mixture on top of cookie crust.
- Step 15 Refrigerate for at least 3 hours or overnight.
- Step 16 For Kahlua whipped cream – whip whipping cream, add sugar and Kahlua. Serve on the side.
