Cous Cous Salad

This summer salad is the perfect side for your next barbeque. It can also be easily transformed into a main dish by just adding shrimp, chicken, or steak and you'll have a complete meal. Quick, easy, and super tasty!
Ingredients
- 1 3/4 cups of cous cous or 2 5.8oz boxes of cous cous - I use a roasted garlic flavor prepackage cous cous
- 1 cup scallions- thinly sliced
- 1/3 cup basil - julienned
- 1 cup grape or cherry tomatoes – cut in half
- Dressing:
- ½ cup olive oil
- ¼ cup balsamic vinegar
- ½ teaspoon of garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon kosher salt
Directions
- Step 1 You can buy plain cous cous and cook it using chicken broth – I always use low sodium so I can control the amount of salt or you can do what I do and buy it with a flavor – I like the garlic herb one for this dish. Just simply follow the directions according to the box. Transfer it to a bowl and make sure to use a fork to fluffy it and let it cool. It literally takes like 5 minutes. I cook two boxes.
- Step 2 Add tomatoes, scallions, and basil.
- Step 3 Mix together.
- Step 4 In a separate bowl combine olive oil, balsamic vinegar,garlic powder, black pepper, kosher salt. Whisk together.
- Step 5 Pour dressing over other ingredients and mix thoroughly.
- Step 6 The longer it sits the better it tastes! Serve cold or room temperature.
