Don't throw those brown bananas away! They are perfect for making homemade banana bread. The ripeness of the bananas' natural sugar will make your bread that much better. I always make two loafs of banana bread when I'm baking. One for our home and one for my folks or a friend. You can easily cut this recipe in half to make one, but I suggest always making two. Eat one now and freeze the other. Perfect for a grab and go breakfast or afternoon snack.

Ingredients
  • 6 to 8 really ripe bananas - the more banana the moister the bread
  • 3 1/2 cups all-purpose flour
  • 1 1/3 cups of granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 4 tablespoons milk
  • 1 teaspoon vanilla
  • 4 eggs
Directions
  • Step 1 In a bowl, mash bananas with a fork. Set aside. In a mixing bowl combine 2 1/2 cups of flour, sugar, baking soda, baking powder and salt. Add shortening, milk and bananas to dry ingredients. Beat with an electric mixer on slow until incorporated. Increase speed and beat for 3 minutes on high. Add eggs and remaining cup of flour and beat until mixed together. Scrape the sides of the bowl to make sure all ingredients are mixed thoroughly.
  • Step 2 Grease two loaf pans with cooking spray or shortening. Pour batter into loaf pans. Bake in a preheated 350 degree oven for 40 minutes. Insert knife or toothpick to see if done. If not, continue to bake for another 5 to 10 minutes. Cool on a wire rack for 10 minutes before removing from pan. Enjoy warm or room temperature!
