Italian Zucchini Bake

This easy Italian casserole can be made with either ground beef or ground turkey. A perfect way to use up your summer zucchini.
Ingredients
- 1 lb ground beef (90%) or turkey
- 1 large Vidalia onion - chopped
- 2 cloves garlic - minced
- 1 28 ounce can crushed tomatoes
- 1 teaspoon oregano
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 zucchinis - thinly sliced
- 1 bag egg noodles - cooked according to directions
- 2 cups shredded cheddar cheese
Directions
- Step 1 In a large skillet brown the meat on medium heat. If using ground turkey drizzle a few tablespoons of olive oil in pan first.
- Step 2 Add onion and garlic. Cook for 5 minutes.
- Step 3 Drain any grease.
- Step 4 Stir in tomatoes, oregano, salt and pepper. Cook for 10 minutes.
- Step 5 Stir in cook noodles. Stir in 1 cup of cheddar cheese.
- Step 6 Remove from heat.
- Step 7 Spray a 13×9 baking dish with cooking spray.
- Step 8 Pour mixture into pan.
- Step 9 Top with 1 cup of cheddar cheese.
- Step 10 Bake in a preheated 350 degree oven for 30 minutes.
- Step 11 Serve hot.
- Step 12 Add succhini and cook for another 10 minutes.
