Ramen noodles aren’t just for college kids! This refreshing ramen noodle salad is crunchy, nutty, sweet and perfect for a hot summer night!

Ingredients
  • 1 14oz bag of coleslaw
  • 2 packages of uncooked ramen noodles without spice packets
  • ¼ cup of sunflower seeds
  • ¼ cup of toasted slivered almonds
  • 1 bunch scallions
  • Dressing:
  • 6 tablespoons rice vinegar
  • ½ cup canola oil
  • ¼ cup sugar
  • Salt and pepper to taste
Directions
  • Step 1 Start with the bag of coleslaw in a mixing bowl.
  • Step 2 Add ramen noodles – breaking them into small chunks.
  • Step 3 Add sunflower seeds, slivered almonds and scallions.
  • Step 4 Toss together ingredients.
  • Step 5 In a separate bowl add canola oil, rice wine vinegar, sugar, salt and pepper.
  • Step 6 Whisk.
  • Step 7 Pour over ramen salad and mix well together.
  • Step 8 Refrigerate.
  • Step 9 Serve as a side with your next barbecue meal.
