Roll-Out Cookies

These cookies are great for baking with children because the dough is perfect for cookie cutters. I started making them with my own children when they were young and learning their letters. We've been making them for Christmas for years because the dough is always consistent and they are easy to decorate.
Ingredients
- 1 cup butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 2 teaspoons baking powder
- 3 cups flour
Directions
- Step 1 Preheat oven to 400 degrees.
- Step 2 In a large bowl, cream butter and sugar with an electric mixer.
- Step 3 Beat in egg and vanilla.
- Step 4 Mix baking powder and flour, add one cup at a time, mixing after each addition. The dough will be stiff.
- Step 5 Blend last cup of flour in by hand (if dough becomes too stiff, add water, a teaspoon at a time.)
- Step 6 Do not chill dough.
- Step 7 Divide dough into 2 portions. On a floured surface, roll each portion into a circle approximately 12 inches in diameter and 1/8 inch thick.
- Step 8 Dip cookie cutters in flour before each use.
- Step 9 Bake cookies on an ungreased cookie sheet for 5 to 7 minutes.
- Step 10 Decorate with your favorite royal icing.
