Strawberry Scones

These strawberry scones are soft and chewy on the inside and crumbly on the outside. Delicious on their own or for a special occasion add my strawberry whipped cream to send them over the top!
Ingredients
- 1/2 cup fresh sliced strawberries
- 2 cups all purpose flour
- 4teaspoons granulated sugar
- 2 teaspoons baking powder
- 1 egg
- 1/3 cup buttermilk
- 1/2 teaspoon vanilla
- 1/2 teaspoon kosher salt
- 6 tablespoons cold butter - diced
- *1/3 all purpose flour may be needed when rolling out scones
Directions
- Step 1 Wash and slice strawberries.
- Step 2 In a small bowl combine strawberries, one teaspoon of sugar, and vanilla. Set aside.
- Step 3 Using an electric standing mixer on low, combine flour, 3 teaspoons of sugar, baking powder, and salt.
- Step 4 Mix.
- Step 5 Add butter to mixer. Beat together until butter turns into pea-sized pieces.
- Step 6 Combine egg and buttermilk together in a small bowl. Reduce speed to low and gradually add buttermilk and egg mixture until combined.
- Step 7 Turn off mixer and fold strawberries into dough by hand. This will take a couple of minutes.
- Step 8 Turn dough onto floured surface.
- Step 9 Flour hands and form dough into a 1″ thick round disc.
- Step 10 Use a floured rolling pin to lightly roll dough.
- Step 11 Wrap the dough in plastic wrap and refrigerator for 1 hour.
- Step 12 Preheat the oven to 400 degrees.
- Step 13 Line a baking sheet with parchment paper.
- Step 14 Using a sharp knife or a pastry cutter, cut the dough into 8 wedges. Place about 2” apart on the baking sheet.
- Step 15 Bake the scones for 15 minutes, or until golden brown and cooked through.
- Step 16 Transfer the baked scones to a cooling rack.
- Step 17 Serve warm or room temperature. Delicious plain or with strawberry whipped cream (see recipe on athomewithjennadams.com)
