This casserole is the perfect side dish during the summer months when you have local yellow squash at your market. Make sure to pick the small ones as they will be more tender and have more flavor. This is very similar to Squash Alabama. You're going to love it!

Ingredients
  • 2 to 3 lbs Yellow Squash - (small ones) sliced thinly
  • 1 Large Vidalia onion - diced
  • 3 Tablespoons olive oil
  • 1 Teaspoon salt
  • 1/2 Teaspoon black pepper
  • 1 Cup mayonnaise
  • 2 Eggs
  • 2 Cups Colby Jack cheese - shredded
  • 1/2 Cup butter - melted
  • 1 Sleeve butter crackers - crushed
Directions
  • Step 1 Sauté squash and onion in olive oil until tender. Sprinkle salt and pepper over vegetables and mix. Stir occasionally.
  • Step 2 Remove from heat
  • Step 3 In a mixing bowl combine mayonnaise and eggs. Mix together.
  • Step 4 Add cheese and mix together.
  • Step 5 Add squash and onion to the mayonnaise, egg, and cheese mixture and combine thoroughly.
  • Step 6 Pour mixture into a 13×9 baking dish.
  • Step 7 Bake in a preheated 350 degree oven for 25 minutes.
  • Step 8 Take out and sprinkle the crushed butter crackers over the top of it. Pour melted butter over crackers.
  • Step 9 Bake for 10 more minutes until top becomes golden.
