This Tomato Beef Rotini Soup is the perfect hearty meal for a cold winter day. The more beef broth you add the more liquid like your soup will be. I made mine with less because I wanted it thick and filling. As with all soups and recipes for that matter, taste as you go along. As the soup cooks, see if you want it to have more of a tomato or beef flavor. You can always add more broth or crushed tomatoes.

Ingredients
  • 1 lb ground beef - 92% lean
  • 1 large Vidalia onion - diced
  • 1 28oz crushed tomatoes with basil
  • 1 15 oz can tomato sauce
  • 2 cups beef broth
  • 4 cups water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lb Rotini pasta
Directions
  • Step 1 Brown the ground beef in a large pot on medium heat.
  • Step 2 Add diced onion to beef was it is brown and cooked through.
  • Step 3 Stir.
  • Step 4 Add salt and pepper. Stir together.
  • Step 5 Add crushed tomatoes, tomato sauce, water to pot.
  • Step 6 Add Worcestershire sauce, onion powder, and garlic powder.
  • Step 7 Stir ingredients together.
  • Step 8 Bring soup to a boil.
  • Step 9 Add uncooked Rotini pasta to soup.
  • Step 10 Cook for 15 minutes, stirring several times.
  • Step 11 Reduce heat to a simmer and stir occasionally.
  • Step 12 Let soup cook for at least 1 hour.
  • Step 13 Taste soup and look at soup. You may prefer a looser soup, if so add more broth or tomatoes depending on your taste preference.
  • Step 14 Enjoy hot with crusty bread or pack it for your lunch in a thermos.
