This dish is full of summer-time flavor. Fresh and vibrant, it's an easy go to dinner and a crowd pleaser. Serve with rice and it's a complete meal.

Ingredients
  • 8 boneless skinless chicken breasts - I use Belle & Evans
  • 1 20 ounce can of pineapple chunks in 100% pineapple juice (drained)
  • 1/2 cup apricot preserves
  • 1/2 cup chili sauce
  • 3 tablespoons amino acid (or soy sauce - low sodium)
  • 4 tablespoons brown sugar
  • 2 teaspoons cornstarch
  • salt & pepper to taste
Directions
  • Step 1 Sprinkle the chicken with salt and pepper.
  • Step 2 Sear the chicken breasts in a medium high heat pan, then remove from heat.
  • Step 3 Place chicken breasts in a 18×10 baking dish and sprinkle with salt and pepper.
  • Step 4 In a bowl combine apricot preserves, chili sauce, brown sugar, amino acid, an cornstarch.
  • Step 5 Pour marinade over chicken.
  • Step 6 Spoon pineapple chunks over marinade and chicken.
  • Step 7 Bake in a preheated 400 degree oven for 40 to 50 minutes basting a couple of times.
  • Step 8 Serve over rice.
