Asian Noodle Salad

This side dish has several ingredients but it's basically the dressing. It all goes into a food processor or blender which makes it super easy. Lots of great flavor and perfect to bring to your next ladies lunch or picnic.
Ingredients
- 1 pound linguine - cooked according to directions
- 2 inch piece of ginger root
- 2 cloves garlic - minced
- 3 tablespoons sugar
- 1 tablespoon Dijon mustard
- 1/2 cup toasted sesame seed oil
- 1/2 cup low sodium soy sauce
- 1/4 cup molasses
- 2 teaspoons hot oil
- 1/4 cup sesames seeds - toasted in fry pan
- 2 to 3 scallions - thinly sliced
Directions
- Step 1 Cook noodles according to directions while making dressing. Drain and add to mixing bowl.
- Step 2 Peel and slice ginger thinly.
- Step 3 Add ginger, garlic, sugar, and mustard to food processor and chop finely.
- Step 4 Add liquid ingredients to food processor and blend until incorporated together.
- Step 5 Toast sesame seeds in frying pan. Tossing constantly as they burn easily. This will take less than a minute.
- Step 6 Pour dressing over noodles. Toss together.
- Step 7 Add most of toasted sesame seeds to dressed noodles. Keep a teaspoon aside for garnish.
- Step 8 Transfer to serving dish. Toss noodles again.
- Step 9 Top with remaining toasted sesame seeds and sliced scallions.
- Step 10 Serve warm, room temperature, or cold.
