Quick and Easy Chicken Mozzarella Pasta

This chicken and fresh mozzarella pasta dish makes for an easy weeknight dinner. Cooked in no time, yet with all the components of a hearty meal.

Ingredients
- 3 Boneless/skinless chicken breasts - cut into bite size pieces
- 1 Vidalia onion - diced
- 2 to 3 Cloves garlic - minced
- 1 28 ounce Crushed tomatoes with basil
- 1lb Capellini pasta or your favorite pasta - cooked according to directions
- 8 oz Fresh Mozzarella - room temperature
- 3 Tablespoons olive oil
- 2 Tablespoons butter
- Kosher salt
- Fresh pepper
- 8 to 10 Basil leaves - chiffonade
- Parmesan - for serving
Directions
- Step 1 Heat olive oil in pan over medium heat.
- Step 2 Place chicken in a single layer in pan and sprinkle with salt and pepper.
- Step 3 Cook for 3 to 4 minutes. Toss and cook until golden brown and completely cooked.
- Step 4 Remove from pan and set aside.
- Step 5 While chicken is cooking prepare pasta according to package.
- Step 6 Add butter to the same pan the chicken was cooked in.
- Step 7 Add diced onion to pan and cook until translucent.
- Step 8 Add minced garlic. Stir.
- Step 9 Cook for 2 minutes then reduce heat to medium – low.
- Step 10 Add can of crushed tomatoes. Stir. Let simmer.
- Step 11 Place chicken back into sauce and stir.
- Step 12 Add half the fresh mozzarella to sauce.
- Step 13 Let simmer until cheese melts.
- Step 14 Add 1/2 cup of pasta water and stir.
- Step 15 Cook for another few minutes and remove from heat.
- Step 16 Drain pasta and serve individually or on a platter. Immediately pour sauce over pasta.
- Step 17 Add remaining fresh mozzarella.
- Step 18 Sprinkle parmesan cheese and basil on top.
- Step 19 Serve immediately.
