Autumn Salad with Maple Vinaigrette

This is the perfect salad for early autumn.  On the last warm days of the fall season before the frost hits, this is just the right salad for your menu.  Lots of delicious flavors to celebrate the bounties of harvest produce with the sweet summer taste of strawberries topped with a light maple syrup dressing.  There are no real specific measurements, I used my taste preferences when adding the ingredients and added what I thought would be enough for two.  Recipes are all about starting with ingredients and making them to yours and your family’s taste.

Autumn Salad

  • Over a medium heat sauté 2 cups spiral cut butternut squash in a couple tablespoons of olive oil.  Cook until tender. Set aside.
  • 3 handfuls of mixed greens
  • 6 to 8 strawberries – thinly sliced
  • 1/2 Granny Smith apple – thinly sliced with skin
  • 3 tablespoons red onion – diced
  • 1 Brussel sprout – shredded
  • 3 tablespoons dried cherries
  • 2 tablespoons – chopped pecans
  • Several chunks of good marinated creamy goat cheese – I love Meredith Dairy’s marinated feta.

Maple Vinaigrette – in a glass jar mix the following:

  • 1/4 cup olive oil
  • 3 tablespoons pure maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 heaping teaspoon Dijon mustard
  • Kosher salt and fresh ground pepper to taste
