Back to School Jam Bars

These quick delicious jam bars are perfect to make for the kids when they head back to school. Pack in their lunch or heat them up for a dessert treat with vanilla ice cream. I make them with red or black raspberry jam but I'm sure they would be delicious with whatever flavor jam your family enjoys the most.
Ingredients
- 1 1/2 cups butter
- 2 cups packed ight brown sugar
- 3 cups old fashion rolled oats
- 3 cups all-purpose flour
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 18 ounce jar jam - I use red or black raspberry jam
Directions
- Step 1 Cream together brown sugar and butter. Scrap the sides of the mixing bowl.
- Step 2 Add vanilla and mix.
- Step 3 In a separate owl, combine rolled oats, flour, salt and baking powder. Stir together.
- Step 4 Add dry ingredients to brown sugar, butter, vanilla mixture.
- Step 5 Press half of mixture into 13×9 baking dish.
- Step 6 Spread jam over the bottom layer evenly using offset spatula or large spoon.
- Step 7 Place the remaining crumble over the jam.
- Step 8 Gently press down – do not pack crumble.
- Step 9 Bake in a preheated 350 degree oven for 35 to 45 minutes until golden brown and jam is bubbling.
- Step 10 Make sure to cool completely before cutting into squares.
