Crispy Broccoli Patties

These crispy broccoli patties are the perfect little snack. Enjoy dipping them in sour cream, Greek yogurt or a buttermilk ranch dressing.

Ingredients
- 1 lb steamed broccoli florets -steamed and chopped
- 1/2 cup grated parmesan cheese
- 1/3 cup panko breadcrumbs
- 2 tablespoons all-purpose flour
- 1 tablespoon minced garlic
- 1 tablespoon dried minced onion
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 eggs
- 2 -3 tablespoons olive oil
Directions
- Step 1 Steam broccoli florets. Let cool and chop. Place into mixing bowl.
- Step 2 Add parmesan cheese, panko breadcrumbs, flour, minced garlic, dried minced onion, salt, and pepper. Mix together.
- Step 3 In a separate bowl, whip eggs with a fork.
- Step 4 Add to broccoli mixture. Mix well making sure all ingredients are combined.
- Step 5 Using an ice-cream scoop, scoop out mixture and using your hands form a ball and then flatten. (About 2 to 3 tablespoons)
- Step 6 Place on dish. Repeat.
- Step 7 Once you used all your ingredients and made them into patties drizzle olive oil into non-stick or cast iron pan. Turn on to medium heat.
- Step 8 Place a few patties at a time in pan making sure not to crowd them.
- Step 9 Cook for 2 to 3 minutes and flip. Cook an additional 2 minutes making sure they are cooked thoroughly and golden brown.
- Step 10 Remove from heat and repeat.
- Step 11 Serve warm with sour cream, Greek yogurt, or buttermilk ranch dressing. Enjoy!
