Blueberry Crumble Loaf

This Blueberry Crumble Loaf is dense and full of berries. The coconut sugar crumble adds a toasty, nutty and caramel taste. It's so yummy warm right out of the oven with a little butter. It's also perfect at room temperature for an afternoon snack or a quick morning breakfast.

Ingredients
- Loaf Ingredients:
- 2 cups all-purpose flour, plus one tablespoon
- 1 1/2 cups granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup whole milk
- 1/2 cup softened salted butter
- 1 tablespoon vanilla
- 2 cups washed, stems removed blueberries
- For Crumble Topping:
- 1/4 all-purpose flour
- 1/2 cup coconut sugar
- 6 tablespoons cold butter - cubed
Directions
- Step 1 Wash 2 cups of fresh blueberries. Remove stems and let dry on clean kitchen towel.
- Step 2 Pour into bowl and toss with 1 tablespoon of all-purpose flour. Set aside.
- Step 3 In a small mixing bowl combine eggs, milk and vanilla. Whisk together.
- Step 4 Set aside.
- Step 5 In a large mixing bowl combine flour, baking soda, salt. Stir together.
- Step 6 Add sugar and mix well.
- Step 7 Add wet ingredients to dry ingredients and mix together.
- Step 8 Gently pour blueberries into batter.
- Step 9 Fold blueberries into batter until well incorporated.
- Step 10 Spray a 9 x 5 loaf pan with non stick cooking spray.
- Step 11 Pour batter into pan.
- Step 12 Bake in a 375 degree oven for 40 minutes.
- Step 13 While loaf is baking make crumble. Combine the flour, coconut sugar and cold butter in a small mixing bowl. Using a fork or clean hands mix into large crumbs. This will take a few minutes.
- Step 14 After 40 to 50 minutes loaf should be turning golden brown on top.
- Step 15 Remove from oven and sprinkle crumble on top of loaf.
- Step 16 Place loaf in the oven for another 5 to 10 minutes or until knife is clean when inserted into loaf.
- Step 17 Because the coconut sugar is brown to begin with, your crumble will be on the dark side. Not to worry, the coconut sugar gives your blueberry loaf a toasty nutty taste. Let cool for at least a half hour before removing from pan. The berries retain their heat and it will be easier to remove loaf when not so hot. Enjoy warm with butter or room temperature.
