French Toast Muffins

These cute individual muffins taste like your favorite French toast breakfast but better because they have a cinnamon streusel on top. Plus, you can make them the night before and bake them off right before guests arrive making the house smell like a bakery.

Ingredients
- 1 loaf Challah bread cut into bite sized pieces (you can use cinnamon raisin bread, brioche, or French bread)
- 6 eggs
- 2 1/2 cups whole milk
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- Streusel Topping
- 1/3 cup cold butter - diced
- 1/3 cup brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon Kosher salt
Directions
- Step 1 Cut Challah bread into bite size pieces and place into large bowl.
- Step 2 In a mixing bowl, crack 6 eggs. Whisk
- Step 3 Add 2 1/2 cups of whole milk to eggs. Whisk.
- Step 4 Add sugar, vanilla, and cinnamon. Mix together.
- Step 5 Pour over bread and mix well.
- Step 6 Scoop custard bread mixture into greased muffin cups.
- Step 7 Cover with plastic wrap.
- Step 8 Chill in refrigerator for 2 hours or over night.
- Step 9 Right before baking muffins make streusel topping.
- Step 10 In a bowl add cold diced butter, brown sugar, flour, cinnamon, and kosher salt. With a fork or your clean hands mix ingredients together until they become a crumble. Those who love nuts could add pecans or almonds.
- Step 11 Remove plastic wrap from muffins.
- Step 12 Top each muffin with streusel mixture.
- Step 13 Bake in a 350 preheated oven for 25 minutes.
- Step 14 Serve with real maple syrup and fresh berries.
