Homemade Pecan Raisin Granola will be your new favorite snack. Buttery crunchy pecans, chewy raisins and sweet coconut mixed in a healthy blend of oats and wheat germ will give you lots of cozy flavor in each bite. Enjoy it as a cereal, sprinkled in your yogurt with fresh fruit or just a handful for an afternoon snack. This recipe can be made a variety of ways - change up the pecans for almonds or walnuts. Add dried cranberries or currants instead of raisins. Mix in sunflower seeds or flax seeds. Maple syrup or honey can be used instead of condensed milk. Enjoy using this recipe to make a variety of delicious granolas! Ps. This also makes a great hostess gift!
Ingredients
- 2 cups old fashioned rolled oats
- 1 cup shredded coconut - sweetened or unsweetened
- 1/2 cup wheat germ
- 1 1/2 cups raisins
- 1 1/2 cups chopped pecans
- 1 teaspoon Kosher salt
- 1/4 cup canola oil
- 1 14 oz can condensed milk
Directions
- Step 1 In a large mixing bowl combine oats, coconut, wheat germ, raisins, pecans and salt.
- Step 2 Mix well.
- Step 3 Add canola oil and condensed milk.
- Step 4 Mix all ingredients together.
- Step 5 Line a shallow baking pan and line it with parchment paper.
- Step 6 Spread granola into one layer and bake in a preheated 300 degree oven for 40 minutes. Occasionally toss it while it is baking.
- Step 7 Remove from heat and let cool for 5 minutes.
- Step 8 Enjoy as a snack, over yogurt and fruit or as a cereal. Ps. Its great when it’s just out of the oven warm with milk.
This looks absolutely delicious! I like the idea of adding other ingredients of your choice, switching up on the nuts etc. I would probably make it just as you have it though.
