Billionaire's Shortbread

Millionaire's Shortbread gets it's name from the over-the-top decadent layers of shortbread, sweet caramel, and delicious chocolate topping. I call mine Billionaire Shortbread because the first time I made them I added extra condensed milk making the caramel layer even thicker. My guest enjoyed them so I've kept the recipe that way. I suggest cutting them into 1 1/2 inch cubes as they are very rich. Keep them refrigerated until serving.
Ingredients
- For Shortbread Layer:
- 1 1/4 cups of room temperature butter
- 1/2 cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon kosher salt
- For Caramel Layer:
- 1 cup butter
- 1 cup light brown sugar
- 1/4 cup light corn syrup
- 2 14 oz sweetened condensed milk
- 1 1/2 teaspoon vanilla
- 1/4 teaspoon kosher salt
- For Chocolate Layer:
- 1/2 cup heaving cream
- 1 1/2 cups semisweet chocolate chips
- 1/2 teaspoon of vanilla
Directions
- Step 1 Preheat oven to 350 degrees.
- Step 2 Line a 9×13” baking pan with parchment paper and spray with non-cooking spray.
- Step 3 Cream together butter and sugar until light and fluffy.
- Step 4 Add egg yolk and vanilla and beat until combined.
- Step 5 Add flour and sea salt and beat until the mixture comes together into large crumbs.
- Step 6 Take dough and press into prepared pan in an even layer.
- Step 7 Bake in preheated oven for 20-25 minutes, until the sides are lightly golden brown.
- Step 8 Let cool on wire rack.
- Step 9 To make caramel, place butter, brown sugar, corn syrup and condensed milk into a sauce pan.
- Step 10 Cook on medium heat until combined. Stir continuously. This process takes about 25 minutes. When it turns a bit darker and starts to boil, it will start pulling away from the sides of the pan at that point, remove it from heat.
- Step 11 Add vanilla and salt. Stir.
- Step 12 Pour over immediately over shortbread.
- Step 13 Refrigerate for an hour.
- Step 14 In a small saucepan, heat the heavy cream over medium heat until it just begins to bubble around the edges. You do not want it to boil.
- Step 15 Reduce heat to low, add chocolate chips and whisk until the mixture is smooth and glossy.
- Step 16 Remove from heat and add vanilla. Whisk together to combine.
- Step 17 Pour over firm caramel.
- Step 18 Refrigerate until ready to serve – at least 2 hours.
- Step 19 Cut into 1 1/2inch squares.
