Old-Fashioned Beef Stew

This old fashioned beef stew is the perfect meal for a cool winter evening. Made with simple ingredients it will be one of your favorite comfort foods. I always make a large batch for our Sunday dinner with the extended family, knowing we will want leftovers the next day. I serve it with homemade biscuits and butter. You can scale down the recipe for a smaller batch, but trust me you'll be left wanting more.

Ingredients
- 4 lbs round steak beef cubes (1/2inch)
- 5 lbs carrots -peeled and chopped into 1 inch pieces
- 20 white potatoes medium size - peeled and chopped into 1 to 2 inch pieces
- 12 yellow onions medium size - peeled and chopped into quarters
- Onion powder
- Kosher salt
- Black pepper
- 3 tablespoons canola oil
- 1 small can of tomato sauce (no salt)
- 2/3 cup ketchup
- 2 32oz boxes beef stock (no salt)
- 2 tablespoons cornstarch with a little water
- Water
Directions
- Step 1 In a large bowl generously coat beef cubes with onion powder.
- Step 2 Sprinkle 1 teaspoon of salt and 1 teaspoon pepper over meat.
- Step 3 Add canola oil to large pan and turn to medium high heat.
- Step 4 Place beef cubes into pot to brown. I do this in batches making sure to brown all sides of the meat.
- Step 5 Once all cubes are browned, pour beef broth over meat to cover.
- Step 6 Add chopped carrots. Cover with beef broth. Stir.
- Step 7 Cook for 30 minutes. Stirring occasionally.
- Step 8 Add onions and cover with water. Stir.
- Step 9 Cook for 30 minutes. Stirring occasionally.
- Step 10 Add potatoes and cover with water. Stir.
- Step 11 Add ketchup and tomato sauce. Stir.
- Step 12 Lower heat and cook until beef, carrots, potatoes are tender, about an hour. Then add cornstarch. (Most of the onions dissolve into sauce)
- Step 13 Add salt and pepper to taste. Serve with homemade biscuits. (See biscuit recipe)
