Orange Chicken

Forget calling delivery. This homemade and healthier orange chicken is crispy, tangy, sweet and takes less than 30 minutes to make. Serve with homemade vegetable rice for a complete meal.
Ingredients
- 6 boneless, skinless chicken breasts, cut into 1 inch pieces (I use Bell and Evans)
- 13 oz orange marmalade (I use Bonne Maman)
- 3 Tablespoons liquid aminos or soy sauce
- 3 Tablespoons rice vinegar
- 1 Tablespoon minced garlic
- 1/4 Teaspoon crush red pepper flakes
- 1 Teaspoon ground ginger
- Zest of 1/2 an orange
- Juice of an orange
- 1/4 Teaspoon garlic powder
- 1/4 cup cornstarch
- 1/2 Teaspoon Kosher salt
- 1/2 Teaspoon black pepper
- 3 to 6 Tablespoons vegetable oil
Directions
- Step 1 In a medium bowl, combine marmalade, liquid aminos, rice vinegar, garlic, orange zest, orange juice, ground ginger, crushed red pepper flakes.
- Step 2 Mix well and set aside.
- Step 3 In a small mixing bowl, combine garlic powder, cornstarch, salt and pepper. Set aside.
- Step 4 Cut chicken breasts into 1 inch pieces.
- Step 5 Place chicken into a gallon Ziplock bag.
- Step 6 Pour garlic powder, cornstarch, salt and pepper mixture over chicken.
- Step 7 Close bag and toss together until each piece of chicken in thoroughly coated.
- Step 8 In a medium high pan drizzle vegetable oil.
- Step 9 Spread chicken in a single layer. Cook for 10 to 12 minutes or until chicken is browned and cooked through. (You may have to do this process in batches to ensure each piece gets cooked properly.)
- Step 10 Once all the chicken is cooked, pour sauce over it.
- Step 11 Cook an additional 2 to 3 minutes until sauce thickens and glazes over chicken.
- Step 12 Stir continuously.
