Oven Baked Hawaiian Chicken

This dish is full of summer-time flavor. Fresh and vibrant, it's an easy go to dinner and a crowd pleaser. Serve with rice and it's a complete meal.
Ingredients
- 8 boneless skinless chicken breasts - I use Belle & Evans
- 1 20 ounce can of pineapple chunks in 100% pineapple juice (drained)
- 1/2 cup apricot preserves
- 1/2 cup chili sauce
- 3 tablespoons amino acid (or soy sauce - low sodium)
- 4 tablespoons brown sugar
- 2 teaspoons cornstarch
- salt & pepper to taste
Directions
- Step 1 Sprinkle the chicken with salt and pepper.
- Step 2 Sear the chicken breasts in a medium high heat pan, then remove from heat.
- Step 3 Place chicken breasts in a 18×10 baking dish and sprinkle with salt and pepper.
- Step 4 In a bowl combine apricot preserves, chili sauce, brown sugar, amino acid, an cornstarch.
- Step 5 Pour marinade over chicken.
- Step 6 Spoon pineapple chunks over marinade and chicken.
- Step 7 Bake in a preheated 400 degree oven for 40 to 50 minutes basting a couple of times.
- Step 8 Serve over rice.
