Peach Melba

The ultimate summer finale is the timeless classic, Peach Melba. Juicy poached peaches, silky vanilla ice cream, and a tart raspberry coulis.

Ingredients
- 2 ripe peaches
- 1 1/4 cup water
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- Sauce:
- 6 ounces raspberries
- 1/2 teaspoon lemon juice
- 1/4 confectioner's sugar
Directions
- Step 1 In a blender, add confectioner’s sugar, lemon juice and raspberries.
- Step 2 Blend on high speed until well combined, about a minute.
- Step 3 Strain through a fine-mesh sieve into a bowl.
- Step 4 Use spatula to help push sauce through sieve.
- Step 5 Set aside.
- Step 6 Discard seeds.
- Step 7 Cut peaches in half.
- Step 8 In a large saucepan, bring water and granulated sugar to a boil.
- Step 9 Stir continuously until sugar is dissolved into water.
- Step 10 Add vanilla to simple syrup.
- Step 11 Add peaches to pan and reduce heat to medium-low.
- Step 12 Simmer for 5 to 7 minutes until peaches are tender, stirring occasionally and flipping peaches over half-way.
- Step 13 With tongs or a slotted spoon remove from pan and transfer to cutting board.
- Step 14 When peaches are cool enough to handle, peel and discard skin and pit.
- Step 15 Cut each half into 4 wedges.
- Step 16 Assemble dessert.
- Step 17 Place raspberry coulis on the bottom of serving dish.
- Step 18 Add warm peaches.
- Step 19 Scoop your vanilla ice cream on top of peaches.
- Step 20 Add more sauce.
- Step 21 Serve immediately.
