Peach Puff Pastries

Make a quick and flaky peach puff pastry dessert with those local summer peaches. Super simple but so delicious.

Ingredients
- 1 box frozen puffed pastry (2 sheets), thawed
- 3 large ripe peaches
- 3 tablespoons butter
- 3 tablespoons light brown sugar
- 1 tablespoon orange juice
- 1 egg
- Flour to keep pastry from sticking to surface
- For Icing
- 2 tablespoons half and half - (add more or less depending on the consistency preference)
- 3 tablespoons confectioner's sugar
Directions
- Step 1 Wash, peel, and slice ripe peaches. Set aside.
- Step 2 In a small pan melt butter over medium heat.
- Step 3 Add light brown sugar and orange juice. Mix together.
- Step 4 Add sliced peaches.
- Step 5 Cook for 2 minutes, stirring and pouring sugar mixture over peaches.
- Step 6 Remove from heat.
- Step 7 Lightly flour work surface and rolling pin.
- Step 8 Place thawed yet cool puff pastry on to work surface. The warmer the pastry the better chance of it sticking.
- Step 9 Roll out pastry in both directions, stretching pastry slightly.
- Step 10 Cut each pastry sheet into 3 equal parts. ( You will have 6 long pieces)
- Step 11 Place the puff pastry on parchment paper on a baking sheet.
- Step 12 Add a few tablespoons of the cooked peaches towards one end of the pastry. (Not too much or it won’t seal shut)
- Step 13 Fold the puff pastry in half, pressing the sides together.
- Step 14 Using a fork, seal the sides together.
- Step 15 Crack an egg into a small bowl and whisk.
- Step 16 Brush the tops and sides of pastry with the egg wash.
- Step 17 Bake in a preheated 400 degree oven for about 15 minutes or until golden brown.
- Step 18 While pastries are baking make glaze.
- Step 19 Combine confectioner’s sugar and half and half until the mixture is smooth but not too runny.
- Step 20 As the peach puff pastries cool, drizzle the glaze on each of them.
- Step 21 Enjoy warm or room temperature.
- Step 22 (Variations: Include cinnamon to the peaches. Add vanilla to glaze mixture or substitute orange juice instead of half and half.)
