Ingredients
  • 2 large Portabella mushrooms - cleaned, stem removed, and gills scooped out.
  • 1/2 red onion - thinly sliced
  • Fresh Ricotta cheese 4 to 6 tablespoons
  • Kosher Salt & Fresh Ground Pepper - to taste
  • Fresh Thyme
  • Olive oil
Directions
  • Step 1 Clean mushrooms. Remove stems. Scoop gills out.
  • Step 2 Place on a baking sheet. Drizzle with olive oil.
  • Step 3 Sprinkle with Kosher salt and fresh ground pepper.
  • Step 4 Bake in a preheated 375 degree oven for 20 minutes or until fork tender.
  • Step 5 While mushrooms are in the oven. Slice the red onion.
  • Step 6 Sautee onion slices in a couple of tablespoons of olive oil and a sprinkle of Kosher salt on medium heat until translucent.
  • Step 7 Once mushrooms are cooked thoroughly remove from oven.
  • Step 8 Top each mushroom with two to three tablespoons of fresh Ricotta cheese.
  • Step 9 Layer cooked onions on top of the cheese and a sprinkle of fresh thyme.
  • Step 10 Serve warm.
