Portabella Mushrooms with Grilled Onions and Fresh Ricotta

Looking for a simple appetizer or first course for your next dinner party? These portabella mushrooms with grilled red onions and fresh ricotta are the perfect answer.
Ingredients
- 2 large Portabella mushrooms - cleaned, stem removed, and gills scooped out.
- 1/2 red onion - thinly sliced
- Fresh Ricotta cheese 4 to 6 tablespoons
- Kosher Salt & Fresh Ground Pepper - to taste
- Fresh Thyme
- Olive oil
Directions
- Step 1 Clean mushrooms. Remove stems. Scoop gills out.
- Step 2 Place on a baking sheet. Drizzle with olive oil.
- Step 3 Sprinkle with Kosher salt and fresh ground pepper.
- Step 4 Bake in a preheated 375 degree oven for 20 minutes or until fork tender.
- Step 5 While mushrooms are in the oven. Slice the red onion.
- Step 6 Sautee onion slices in a couple of tablespoons of olive oil and a sprinkle of Kosher salt on medium heat until translucent.
- Step 7 Once mushrooms are cooked thoroughly remove from oven.
- Step 8 Top each mushroom with two to three tablespoons of fresh Ricotta cheese.
- Step 9 Layer cooked onions on top of the cheese and a sprinkle of fresh thyme.
- Step 10 Serve warm.
