Roasted Garlic Parmesan Parsnips & Carrots

The combination of roasted parsnips and carrots is both sweet and earthy. Incredibly simple, this dish is the perfect side to go along a roasted chicken or beef roast.
Ingredients
- 4 parsnips washed and peeled
- 4 carrots washed and peeled
- Olive oil
- 1 scant teaspoon Kosher salt
- 1/2 teaspoon fresh ground black pepper
- 1 teaspoon garlic powder
- 1/3 cup grated Parmesan cheese
- 1/4 cup grated Parmesan cheese to sprinkle when serving
- 2 teaspoons fresh thyme
Directions
- Step 1 Wash and peel parsnips and carrots.
- Step 2 Cut vegetables into planks or slices that are roughly equal in size about 1/2″ thick planks, about 2″ long.
- Step 3 Drizzle with olive oil.
- Step 4 Add kosher salt, fresh ground pepper, garlic powder, and 1/3 cup of Parmesan cheese.
- Step 5 Toss together to make sure vegetables are coated with the olive oil and ingredients.
- Step 6 Spread the vegetables into a single layer on a parchment paper lined sheet pan.
- Step 7 Place in a preheated 425 degree oven.
- Step 8 Roast in oven for 20 minutes. Use a spatula to flip the vegetables and roast for another 15 to 20 minutes.
- Step 9 Once vegetables are tender and slightly golden brown remove from oven.
- Step 10 Sprinkle remaining Parmesan cheese and fresh thyme on top.
- Step 11 Serve hot.
