Potato Stackers

These Potato Stackers are not only adorable but oh so delicious. Packed with flavor, they are the perfect size as an appetizer or a side dish with a juicy steak. You'll want to double the recipe because they'll be gone before you know it!
Ingredients
- 4 to 5 Yukon Gold potatoes - sliced into 1/8in rounds
- 4 tablespoons melted butter
- 2 tablespoons olive oil
- 3 tablespoons grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon Kosher salt
- 1 teaspoon ground pepper
- 1 tablespoon dried chives
- Sour cream
Directions
- Step 1 Preheat the oven to 375 degrees.
- Step 2 Slice potatoes into 1/8in rounds to fit into muffin tin.
- Step 3 Place into bowl. Drizzle 2 tablespoons of butter over potatoes.
- Step 4 Drizzle olive oil over potatoes.
- Step 5 Sprinkle, Parmesan cheese, garlic powder, onion powder, paprika, salt and pepper over potatoes.
- Step 6 Toss until potatoes are coated evenly.
- Step 7 Using remaining butter, coat muffin tin.
- Step 8 Layer potato slices into the buttered muffin tin.
- Step 9 Bake uncovered for 30 to 40 minutes or until golden brown and centers are tender.
- Step 10 Remove from oven and let rest for 5 minutes before placing on serving dish.
- Step 11 Top with sour cream and a sprinkle of chives.
