Looking for a vegetable to go with your dinner? Try these roasted carrots. They are sweet, savory, and just plain pretty to look at.

Ingredients
  • 2lbs carrots - peeled and cut into 1 inch pieces
  • Olive oil
  • 1/4 apricot preserves
  • 4 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1 tablespoon parsley - chopped
  • Salt and pepper to taste
Directions
  • Step 1 Place carrots on baking sheet. Drizzle olive oil on them – making sure they are all coated.
  • Step 2 Bake in a 400 degree oven for 40 minutes. Check and toss half way through baking.
  • Step 3 In a small sauce pan, heat apricot preserves and butter.
  • Step 4 Add garlic powder to mixture. Cook for 2 minutes on low.
  • Step 5 When carrots are done cooking place in bowl. Pour apricot garlic butter over them.
  • Step 6 Sprinkle with parsley.
  • Step 7 Serve hot.
