Roasted Tomato Garlic Parsley Pasta

This is a super easy weeknight pasta dish. Roasted tomatoes with shallots, fresh thyme and basil, and Parmesan Reggiano adds a burst of flavor to this 3 minute cooked pasta. Your family will think you spent much more time preparing their meal and will go back for seconds!
Ingredients
- 12 ounces of greenhouse multi colored grape tomatoes
- Olive oil
- Fresh thyme - 3 or 4 sprigs
- 1/4 cup fresh basil - chiffonade
- Shallot - diced
- Kosher salt & ground pepper to taste
- Parmesan Reggiano
- al Dente 3 Minute Garlic Parsley Fettuccine Pasta
- 6 tablespoons butter
Directions
- Step 1 Wash 12 ounces of grape tomatoes.
- Step 2 Place on parchment lined baking sheet.
- Step 3 Drizzle 3 or 4 tablespoons of olive oil over tomatoes.
- Step 4 Add 3 or 4 sprigs of fresh thyme.
- Step 5 Add 1 diced large shallot.
- Step 6 Sprinkle Kosher salt and fresh ground pepper over mixture.
- Step 7 Toss together.
- Step 8 Roast in a preheated 425 degree oven for 15 minutes.
- Step 9 Toss half way through cooking.
- Step 10 After 15 minutes, remove tomatoes from oven.
- Step 11 Remove sprigs of thyme.
- Step 12 Make pasta according to package and put into large bowl.
- Step 13 Toss pasta with butter and several shavings of Parmesan Reggiano.
- Step 14 Distribute roasted tomatoes, their juice, and olive oil over hot pasta. Toss together.
- Step 15 Sprinkle basil and grated Parmesan Reggiano over pasta.
- Step 16 Serve warm as a meal or as a side dish.
