Grandma's Apple Cake

My Mom's apple cake is a staple for family gatherings. Filled with apples and cinnamon it's a moist cake perfect to make for a special occasion or make for your family's weeknight dessert.
Ingredients
- Batter
- 6 to 8 apples - peeled and sliced into 1/4 inch slices (medium to large - I use MacIntosh)
- 4 eggs
- 1 cup oil
- 1/2 cup orange juice
- 3 teaspoons vanilla
- 3 cups all purpose flour
- 2 cups sugar
- 3 teaspoons baking powder
- Cinnamon/Sugar Mixture
- 10 teaspoons sugar
- 4 heaping teaspoons cinnamon
Directions
- Step 1 Wash, peel, and slice apples into 1/4 inch slices. Set aside.
- Step 2 In a separate bowl make sugar and cinnamon mixture. Combine 10 teaspoons of granulated sugar with 4 heaping teaspoons of cinnamon.
- Step 3 Toss cinnamon and sugar mixture over apple slices and mix until apples are well covered. Set aside.
- Step 4 With an electric mixer, beat eggs, oil, orange juice, vanilla, and sugar. Mix to combine.
- Step 5 Add flour and baking powder. Scrape down sides of bowl and mix again to ensure all ingredients are incorporated.
- Step 6 Spray Bundt pan with non-stick cooking spray and flour it.
- Step 7 Pour 1/3 of the batter into pan. Spread evenly.
- Step 8 Distribute half of the apples on top of batter in a flat layer.
- Step 9 Pour another 1/3 of batter on top of apples.
- Step 10 Distribute the remaining apples on top of batter.
- Step 11 Pour the last of the batter on top of apples and spread evenly.
- Step 12 Bake in a preheated 350 degree oven for 1hour 10 minutes or until knife comes out clean.
- Step 13 Remember, everyone’s oven is different. Check your cake after 50 minutes or so and bake accordingly.
- Step 14 Remove from oven and place on cooling rack for at least 40 minutes.
- Step 15 Run a off-set spatula around pan and remove cake.
- Step 16 Sprinkle powder sugar over cake.
- Step 17 Enjoy warm or room temperature.
