These are soft mild spice cookies. Enjoy with a cup of tea or sandwich them between vanilla ice cream for an extra treat.
Ingredients
- 1 1/2 cups butter, softened
- 1 1/2 cups granulated sugar
- 1/2 cup light brown sugar
- 2 eggs, room temperature
- 1/2 cup molasses
- 4 1/2 cups all-purpose flour
- 3 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Directions
- Step 1 In a separate bowl combine the dry ingredients and set aside.
- Step 2 In an electric mixer cream butter and sugars together.
- Step 3 Add eggs one at a time, beating each time.
- Step 4 Add the molasses and scrape down the sides of the bowl.
- Step 5 Gradually add the dry ingredients to the creamed mixture.
- Step 6 Refrigerate for at least one hour.
- Step 7 Roll into one inch balls
- Step 8 roll in additional sugar.
- Step 9 Place 2 inches apart on ungreased baking sheets.
- Step 10 Bake in a preheated 350 degree oven for 8 to 12 minutes until they are puffy and golden brown.
- Step 11 Let them stand of pan one minute then remove to cool on a wire rack.
- Step 12 Enjoy!
