The Best Homemade Chocolate Cupcakes

These homemade chocolate cupcakes are rich and moist. Whether your a child or an adult you will love these decadent cup cakes. They are so delicious friends say you don't even need frosting on them, but my peanut butter frosting goes perfect on them. It's fluffy, light, and not super sweet. Its a classic combo - chocolate and peanut butter. See my Perfect Peanut Butter Frosting recipe.

Ingredients
- 2 1/4 cups granulated sugar
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1 cup coffee
- 1 cup milk
- 1/2 cup canola oil
- 2 eggs
Directions
- Step 1 Preheat the oven to 350 degrees.
- Step 2 Spray cupcake wrappers with non-stick spray. Put cupcake wrappers in muffin tins. (I like to use the taller paper cupcake wrappers)
- Step 3 In a mixing bowl add sugar
- Step 4 Sift flour, cocoa, baking soda, baking power and and salt together over the sugar
- Step 5 Into a separate mixing bowl add eggs, canola oil and mix
- Step 6 Add chocolate chips to a small bowl. Pour coffee over chocolate chips and stir until chips are melted. Pour mixture into the the bowl with the eggs and canola oil. Add milk.
- Step 7 Blend in with mixer.
- Step 8 Slowly add dry ingredients. Beat for 3 minutes on medium high.
- Step 9 Scrape down bowl and mix with spatula.
- Step 10 Pour 2/3 cup into cupcake wrappers.
- Step 11 Bake in a 350 degree oven for 25 to 30 minutes.
- Step 12 Take out of oven and remove on to wire tray to cool.
- Step 13 Once completely cool, frost.
