Eight Vegetables One Dish

This one dish has eight different vegetables in it. Full of flavor, nutrition and color. Served with a hearty bread like my 4 Cheese Herb Bread it's a delicious and healthy meal for your friends and family.
Ingredients
- 3 sweet potatoes - peeled and sliced into round discs
- 3 yellow potatoes - peeled and sliced into round discs
- 2 zucchini - sliced into round discs
- 2 yellow squash - sliced into round discs
- 1 portabella mushroom - chopped
- 1 large Vidalia onion - chopped
- 1 can San Marzano plum tomatoes
- Panko bread crumbs
- Parmesan cheese - grated
- Kosher salt and black pepper
- Olive oil
Directions
- Step 1 In a 13 x 9 baking dish layer vegetables starting with sweet potatoes and yellow potatoes.
- Step 2 Drizzle with olive oil and sprinkle with salt and pepper.
- Step 3 Add zucchini, yellow squash, mushrooms and onion on top of potatoes.
- Step 4 Evenly dispersed plum tomatoes – crushing them as you put them on top of vegetables.
- Step 5 Sprinkle vegetables with Panko bread crumbs and parmesan cheese.
- Step 6 Bake in a 375 degree preheated oven for an hour. Cover top with tin foil and bake another 20 minutes to and hour and a half until vegetables are tender and top is golden brown.
