This potato casserole is pure comfort food. You can make it ahead and bake it off right before guest arrive.

Ingredients
  • 10 medium potatoes -(I use yellow)
  • 1 pint sour cream
  • 1 cup Colby Jack cheese - shredded
  • 5 tablespoons milk
  • 2 bunches of scallions - chopped
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1 stick melted butter
  • Panko breadcrumbs
Directions
  • Step 1 Peel potatoes. Boil potatoes until halfway cooked – not quite fork tender.
  • Step 2 Drain potatoes.
  • Step 3 Using a box grater, shred potatoes. Place in mixing bowl.
  • Step 4 Add sour cream, milk, cheese, scallions, salt and pepper to potatoes.
  • Step 5 Mix well.
  • Step 6 Put mixture into a greased 13×9 baking pan.
  • Step 7 Top with panko breadcrumbs.
  • Step 8 Pour melted butter over breadcrumbs.
  • Step 9 Bake at 375 for 1 hour.
  • Step 10 Serve hot.
