Potato Casserole

This potato casserole is pure comfort food. You can make it ahead and bake it off right before guest arrive.
Ingredients
- 10 medium potatoes -(I use yellow)
- 1 pint sour cream
- 1 cup Colby Jack cheese - shredded
- 5 tablespoons milk
- 2 bunches of scallions - chopped
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 1 stick melted butter
- Panko breadcrumbs
Directions
- Step 1 Peel potatoes. Boil potatoes until halfway cooked – not quite fork tender.
- Step 2 Drain potatoes.
- Step 3 Using a box grater, shred potatoes. Place in mixing bowl.
- Step 4 Add sour cream, milk, cheese, scallions, salt and pepper to potatoes.
- Step 5 Mix well.
- Step 6 Put mixture into a greased 13×9 baking pan.
- Step 7 Top with panko breadcrumbs.
- Step 8 Pour melted butter over breadcrumbs.
- Step 9 Bake at 375 for 1 hour.
- Step 10 Serve hot.
