These banana oatmeal pancakes are so simple to make and super healthy too. You can add berries, chocolate chips, nuts, or coconut to change up the flavor.

Ingredients
  • 2 bananas
  • 2 eggs
  • 1 cup rolled oats
  • 1 teaspoon vanilla
Directions
  • Step 1 In a blender combine bananas, eggs, oats and vanilla. Blend on high until incorporated.
  • Step 2 Heat skillet on medium heat.
  • Step 3 Pour1/3 cup of batter into pan. Cook until you see little bubbles start to form around edge and are golden brown. Flip pancake.
  • Step 4 Repeat.
  • Step 5 Enjoy topped with real maple syrup and bananas.
  • Step 6 They are also great with peanut butter and a few mini chocolate chips on top.
