Stuffed Sweet Baby Peppers is a low-carb and keto friendly appetizer that is quick, easy, and delicious for sharing at any gathering! Colorful baby peppers filled with a creamy herb cheese is the perfect two bite snack. The little pepper is the perfect vessel for a tasty filling. I like to be creative and change the cheeses, add fresh herbs, or even stuff them with tuna salad.

Ingredients
- 1 lb sweet baby peppers
- 2 5 oz creamy herb cheese containers such as Boursin
- Parmesan cheese
Directions
- Step 1 Preheat oven to 375 degrees.
- Step 2 Wash peppers and slice length-wise.
- Step 3 Remove seeds and place peppers on a baking sheet lined with parchment paper.
- Step 4 Stuff all the peppers with cheese.
- Step 5 Sprinkle parmesan over filled peppers.
- Step 6 Bake in preheated oven for approximately 5 to 7 minutes.
- Step 7 Then broil for 2 to 3 minutes. Everyone’s oven is different so closely watch while broiling that they don’t burn.
- Step 8 Remove from oven and let cool for 5 minutes.
- Step 9 Serve warm or room temperature.
