A cheese and tomato quiche with fresh basil is a classic. A rich, velvety custard of eggs and cream, layered with ripe tomatoes, melted cheese, and aromatic herbs.

By:

Ingredients
  • 4 large or jumbo eggs
  • 1 1/2 cups half and half
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 small Vidalia onion - chopped small
  • 4 - 5 fresh basil leaves (chiffonade)
  • 1/2 freshly grated parmesan cheese
  • 1/2 cup cheese - Swiss, Gruyere, Cheddar, firm Mozzarella (not fresh, it as too much liquid), or Fontina (A mixture is great too)
  • 2 - 3 ripe vine tomatoes - sliced 1/4-inch to 1/8-inch
  • 1 homemade or store bought pie crust
Directions
  • Step 1 Salt and drain: Place sliced or halved tomatoes in a colander or on a wire rack, sprinkle lightly with salt, and let them sit for 15 to 30 minutes to draw out excess moisture.
  • Step 2 Pat dry: Blot the tomato slices firmly with paper towels.
  • Step 3 Blind bake your pie crust. Simply take your pie crust, line it with parchment paper, then add dry beans or baking beads. Bake it for 5 to 7 minutes in a 400 degree oven. I also cover my edges with a crust shield, but you can use tin foil so the crust doesn’t brown to quickly. Remove from oven, remove beans or beads and let stand.
  • Step 4 Sauté onion with a couple tablespoons of olive oil over medium heat until onions are translucent.
  • Step 5 In a bowl whisk eggs and half and half together.
  • Step 6 Add pepper.
  • Step 7 Assembly quiche. Place half of the onion in the baked pie crust. Then half of your cheeses. Then a layer of tomatoes. Sprinkle half of basil on top of tomatoes.
  • Step 8 Repeat.
  • Step 9 Pour whisked egg custard over ingredients.
  • Step 10 Place quiche on a baking sheet to prevent spilling into oven. Place tin foil or crust shield over edge of quiche.
  • Step 11 Bake for 15 minutes in a 400 degree oven.
  • Step 12 Lower temperature to 350 and bake an additional 30 to 35 minutes until golden brown and the slightest giggle in center or quiche.
  • Step 13 Enjoy hot or room temperature!
