Cheddar apple honeyNow that my children are young adults, I relish every moment I can spend with them.  They have such busy lives with school, sports, work, and friends that sometimes squeezing in a dinner as a family can be challenging.  What once was the norm is now novel, but I’ll take what I can get.  After all, we want our children to grow up and be independent (but maybe with one foot still in the door).

This past week by chance, the four of us were all going to be home one evening… so I suggested to play cards.  I knew it was going to be a bit chilly and that we wanted to be able to eat our dinner while we played some games.  I thought, let’s go back to basics and have soup and grilled cheese.  Simple and classic but kicked up a notch.  I made a roasted butternut squash soup.  Creamy and healthy with a hint of Thanksgiving flavor.  I also made a tomato soup packed with roasted ripe vine tomatoes. I thought it would be fun for each of us to create our own grilled cheese sandwiches to pair with our soup.  So I put out all the ingredients I thought they may enjoy to create their own masterpieces.  With a variety of cheeses, breads, and toppings I shared what I thought may go nicely together.  It was a fun interactive activity while we got to catch up on what was new that week.  Then we grabbed our easy to eat dinner and headed to play.  For dessert I made simple apple hand pies.  Perfect for eating during the games.  Family dinners are important and should never be taken for granted. cards and soup
