Creamy Orzo with Tomatoes and Peas

This creamy, cheesy orzo is pure comfort in a bowl. One pan, twenty minutes, and so easy to throw together on a busy night. Serve with grilled chicken and dinner is complete.

Ingredients
- 1 lb orzo pasta
- 2 to 3 tbsp olive oil
- 2 large shallot, diced
- 2 garlic clove, minced
- 28 oz canned diced tomatoes, drained
- 1 1/2 cups heavy whipping cream
- 1 10 oz bag frozen peas
- 1 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper
Directions
- Step 1 Bring a large pot of salted water to a boil. Add the orzo and cook for about 8 minutes.
- Step 2 Drain pasta and set aside.
- Step 3 In a large skillet over medium heat add olive oil.
- Step 4 Add the shallot and cook until soft.
- Step 5 Add minced garlic and cook for about 2 minutes.
- Step 6 Add tomatoes and stir together. Cook for about 5 minutes.
- Step 7 Add in the heavy cream and mix together.
- Step 8 Stir in frozen peas and let simmer for another 5 minutes.
- Step 9 Add the cooked orzo to the pan and mix.
- Step 10 Add the Parmesan cheese and mix together to ensure the pasta is coated in the creamy sauce.
- Step 11 Season with salt and pepper to taste and serve immediately.
