Easy Vodka Pasta Sauce

When you planned nothing for dinner and you don't want to go out this dish is perfect because you probably have all the ingredients in your pantry. Make this quick sauce and boil some pasta and there you have it. Serve with a quick salad and dinner is made!

Ingredients
  • 1 large 28 oz can San Marzano crushed tomatoes
  • 1/2 Vidalia onion - diced
  • 1 tablespoon garlic - minced
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 cup half and half
  • 1/4 cup vodka
  • kosher salt to taste
  • 2 tablespoons butter
  • 3/4 cup parmesan cheese
  • fresh basil
  • 1 pound pasta
Directions
  • Step 1 Boil pasta according to the directions on the package. While that is cooking make sauce.
  • Step 2 In a pan sauté onions in olive oil until translucent.
  • Step 3 Add minced garlic and tomato paste. Cook for about a minute while stirring.
  • Step 4 Add crushed tomatoes.
  • Step 5 Add 4 to 6 leaves of basil.
  • Step 6 Add vodka and cook 10 minutes on low to medium heat.
  • Step 7 Add half and half.
  • Step 8 Sprinkle 1/2 cup of parmesan cheese into sauce.
  • Step 9 Add salt to taste.
  • Step 10 Let simmer for 5 to 10 minutes.
  • Step 11 Remove basil leaves.
  • Step 12 Right before serving stir in butter and sprinkle with the remaining parmesan.
