This classic casserole is the perfect make ahead meal that you can also freeze so you have prepared meals for those busy weeknights. Bite size pieces of chicken and broccoli with a creamy cheese sauce and buttery crust. Serve over rice.

Ingredients
  • 2 to 3 pounds of skinless chicken breasts -baked and cut into bite size pieces (I bake mine in a 375 degree oven for about 30 minutes covered in tin foil. Then I cut chicken into bite size pieces)
  • 3 cups steamed broccoli - cut into bite size florets
  • 2 cans cheese and broccoli soup
  • 1 1/2 soup cans of milk
  • 1 cup Colby cheese - shredded
  • 1/2 cup Velveeta cheese - cubed
  • 1 sleeve Ritz crackers - crushed
  • 1/4 melted butter
Directions
  • Step 1 Place cooked chicken in bottom of 13×9 pan.
  • Step 2 Layer steamed broccoli over chicken.
  • Step 3 Mix soup and milk together. Pour over chicken and broccoli.
  • Step 4 Sprinkle Colby and Velveeta cheese over soup.
  • Step 5 Sprinkle crushed Ritz crackers on top and pour melted butter over them.
  • Step 6 Bake in a 350 degree oven for 35 to 40 minutes until golden brown and bubbly.
  • Step 7 Serve over rice.
  • Step 8 Perfect to make ahead and freeze, just place in aluminum tray, wrap well with foil, and date.
