Ingredients
  • 6 to 8 bell peppers
  • 1 cup uncooked brown rice
  • 2 lbs 90% ground beef (grass fed if possible) You can also use ground turkey
  • 1 bell pepper diced
  • 1 large Vidalia onion diced
  • 2 tablespoons minced garlic
  • 1 15 ounce can of tomato sauce
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1/2 cup pepper jack cheese
  • 1/2 cup Colby cheese
  • Extra cheese for topping
  • salt and pepper to taste
Directions
  • Step 1 Wash peppers. Cut tops off (Save them as little tops to keep peppers warm and for pretty presentation).
  • Step 2 Core them and remove seeds and membranes. Trim bottoms if need be to help them stand. Make sure not to make a hole in the bottom of the pepper.
  • Step 3 Parboil pepper until tender. Drain them and set aside.
  • Step 4 Cook brown rice according to the package. Set aside.
  • Step 5 In a large skillet, sauté diced pepper and onion. Once they are soft add your minced garlic. Cook for 2 minutes. Remove from pan.
  • Step 6 Brown your ground beef in the same pan. Breaking the meat into small pieces with your spoon. Once it is brown, drain any extra fat from the pan.
  • Step 7 Next, add your tomato sauce, garlic powder, onion powder, salt and pepper to taste.
  • Step 8 Return the onion, pepper, and garlic mixture to pan. Add cooked rice and cheese. Mix together. Taste to see if you need more salt or pepper.
  • Step 9 Stuff the peppers with the mixture. Top with extra cheese.
  • Step 10 Bake at 350 degrees for half hour.
  • Step 11 Serve with tomato sauce on the side.
  • Step 12 You can make these one or two days ahead and keep in the fridge then bake them when you are ready to eat. You can also individually wrap them and freeze them. Place in a freezer bag, label and date.  Thaw over night or on the counter for a few hours. Bake them when you are ready.
