Apple Cinnamon Muffins

One of my family's favorite apple recipes. These healthy muffins are perfect for a grab and go breakfast with a glass of milk or an afternoon snack.

Ingredients
- Muffins
- 1 1/2 cups all-purpose flour
- 1/2 cup wheat germ
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 egg - room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar - packed
- 1 teaspoon good vanilla
- 1/4 cup melted butter
- 1 1/4 cups Greek yogurt - I use vanilla flavor but plain is fine
- 1 teaspoon cinnamon - heaping
- 2 apples cups peeled and diced
- Topping
- 1 cup brown sugar - packed
- 1/4 cup all-purpose flour
- 1/4 cup butter - cold and diced
- 1/2 teaspoon cinnamon
Directions
- Step 1 In a bowl, combine all-purpose flour, wheat germ, baking powder, and salt.
- Step 2 In a mixer combine egg, granulated sugar, brown sugar and vanilla. Cream together.
- Step 3 Scrape down sides of the bowl.
- Step 4 Add butter, yogurt, and cinnamon. Mix.
- Step 5 Slowly add dry ingredients until it is all combined.
- Step 6 Scrape down sides of the bowl.
- Step 7 Add apples and stir by hand making sure apples are thoroughly distributed in batter.
- Step 8 Spray muffin tin with non-stick spray.
- Step 9 Using an ice-cream scoop fill muffin tin to the rim.
- Step 10 In a separate bowl combine brown sugar, flour, cinnamon, and butter.
- Step 11 Using a knife, pastry blender or your hands combine until it forms small pea size crumbles.
- Step 12 Sprinkle on top of muffins.
- Step 13 Bake in a 350 degree oven for 20 to 25 minutes until golden brown.
- Step 14 Once the muffins are completely cool remove from pan. If you wish to freeze them – wrap individually in plastic wrap and place in freezer bag. Label and date. You can store in the freezer up to a month.
- Step 15 Let thaw overnight in the refrigerator or on the counter for an hour. Reheat in a 350 degree oven for 10 minutes to warm up the muffin and crisp up the edges.
