Grab & Go Breakfast - An Eggcellent Idea

Two grab and go breakfast ideas made with essentially the same ingredients. Easy to make and packed with protein. Perfect for early mornings. You can make these freezable meals in advance in numerous ways. Start with the basics of eggs and add your favorite vegetables, cheese and meats.

Ingredients
  • Ingredients for both recipes. Follow instructions for specific amounts for each recipe.
  • A dozen and half eggs
  • 1/2 cup of milk
  • 2 Vidalia onions - diced
  • 2 bell peppers - diced
  • 2 ham steaks - diced
  • 2 cups cheese - Colby and Monetary Jack
  • 2 teaspoons onion powder
  • Salt and Pepper to taste
  • 8 8 inch flour tortillas
  • Salsa
  • 1/4 cup fresh chives - finely chopped
  • Non stick spray
  • 2 tablespoons of olive oil
Directions
  • Step 1 Sauté diced onions and peppers in olive oil until translucent. Set aside.
  • Step 2 Egg Muffins
  • Step 3 Crack 8 eggs into mix bowl.
  • Step 4 Add 1/2 cup of milk and a pinch of salt and pepper.
  • Step 5 Spray muffin tin with non-stick spray.
  • Step 6 Scoop a teaspoon of diced ham into each muffin cup.
  • Step 7 Scoop a teaspoon of cooked peppers and onions into each muffin cup.
  • Step 8 Pour egg mixture 3/4 to the top of each muffin cup.
  • Step 9 Add a heaping teaspoon of cheese to each one.
  • Step 10 Sprinkle chives on top.
  • Step 11 Bake in a 350 degree oven for 25 minutes.
  • Step 12 Let cool for 5 minutes and remove. After cooling completely place in a freezer friendly container lined with wax paper between layers. They will last 1 to 2 months in freezer and a week in the refrigerator. To reheat – defrost over night or an hour on the countertop. Microwave at 30 second increments or warm in a toaster oven or air fryer for a minute.
  • Step 13 Egg Burritos
  • Step 14 Scramble 10 eggs in pan with a pinch of salt and pepper on low heat.
  • Step 15 Place 2 to 3 tablespoons of scrambled eggs on tortilla.
  • Step 16 Sprinkle on cheese.
  • Step 17 Spoon a 2 to 3 teaspoons of peppers and onions on top of cheese.
  • Step 18 Spoon 2 to 3 teaspoons of diced ham on top of peppers and onions.
  • Step 19 Spoon a 2 to 3 teaspoon of salsa on top of ham.
  • Step 20 Sprinkle with chives.
  • Step 21 Wrap up tortilla.
  • Step 22 Repeat until all tortillas are made.
  • Step 23 Wrap individually in plastic wrap and put into a freezer bag. They will last 2 months in the freezer and a week in the refrigerator. To reheat – defrost over night or an hour on the countertop. Microwave at 30 second increments or pan fry in a bit of oil until golden brown and warm inside. You can also reheat them in an air fryer for 1 to 2 minutes. Remember to label and date your freezer bags.
