Fresh Corn Salad

This fresh corn salad is a terrific summer side dish. Made with fresh ripe local corn you know your salad will be delicious. Perfect for a barbecue or dinner party. You can make this dish ahead of time and spend more time with friends and family.

Ingredients
  • 8 ears of corn
  • 1 pint of grape or cherry tomatoes - cut in halves
  • 1/2 red onions - diced
  • 3/4 cup basil - chiffonade
  • 1 ripe avocado - diced
  • 1/3 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1 teaspoon Kosher salt
  • 1 teaspoon freshly ground pepper
Directions
  • Step 1 Place 8 ears of husked corn into a boiling pot of water for 5 minutes.
  • Step 2 Remove and place into an ice bath.
  • Step 3 Cut kernels off cobs. I suggest using a Bundt pan and holding the corn in the center, run the blade of your knife down the sides letting the kernels fall into the pan. Repeat for all ears of corn.
  • Step 4 Place in a mixing bowl. Gently break up an larger pieces of corn.
  • Step 5 Add olive oil, apple cider vinegar, onion, salt and pepper.
  • Step 6 If you are making this in advance stop here and refrigerate.
  • Step 7 Before serving add tomatoes, avocado, and basil.
  • Step 8 Remember to taste before serving to see if you need more seasoning.
