Gluten Free Double Chocolate Fudgy Brownies

You would never know these scrumptious brownies are naturally gluten-free. Super moist, fudgy, and full of chocolate all the necessary check points for perfect brownies. Serve warm with a scoop of your favorite ice cream for a decadent dessert.
Ingredients
- 1 cup finely ground blanched almond flour
- 1 cup coconut sugar
- 1/3 cup unsweetened cacao powder
- 2 large eggs
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon fine sea salt
- 1/3 cup plus 3 tablespoons mini chocolate chips
Directions
- Step 1 Preheat the oven to 350ºF. L
- Step 2 Line an 8-inch square pan with parchment paper. Spray the pan lightly with cooking spray first. This will hold paper in place. Then spray parchment paper.
- Step 3 In a bowl, combine the almond flour, coconut sugar, cacao powder, baking soda, and salt. Sift well to help break up any clumps.
- Step 4 Add in the eggs, butter, and vanilla, to a large bowl. Mix together.
- Step 5 Slowly add dry ingredients to wet ingredients. It will be a very thick batter.
- Step 6 Stir in 1/3 cup mini chocolate chips.
- Step 7 Pour batter into 8×8 pan. Spread evenly and sprinkle with remaining mini chocolate chips.
- Step 8 Bake for 20 to 25 minutes. You want the edges to have browned and the center a bit jiggly.
- Step 9 Let cool for at least 2 hours before cutting into squares.
