Roasted Asparagus

Ingredients
- 1 large bunch (about 1 pound) fresh asparagus
- 1 to 2 teaspoons olive oil
- Kosher salt to taste
- Freshly ground black pepper, to taste
- Half of fresh lemon
- Sprinkle of finely grated Parmesan cheese
Directions
- Step 1 Preheat the oven to 425 degrees.
- Step 2 Snap off the woody ends of the washed asparagus (if you bend the asparagus near the base, it will naturally snap in the right place ). Discard the ends.
- Step 3 Place the asparagus on the sheet and drizzle with 1 to 2 tablespoons olive oil, just enough to lightly coat the asparagus. Sprinkle salt and pepper over the asparagus, and toss until the spears are lightly coated in oil. Arrange them in a single layer on baking sheet.
- Step 4 Sprinkle with half of a fresh lemon.
- Step 5 Bake for 10 minutes.
- Step 6 Remove baking sheet from oven and sprinkle with Parmesan cheese.
- Step 7 Return baking sheet to oven and bake for another 10 minutes or until the the base of the asparagus is easily pierced with a fork.
- Step 8 Transfer to a serving platter and serve while hot. You may want to sprinkle a bit more Parmesan cheese on top.
